Place the steak and all the marinade ingredients in a large Ziploc bag (or anything similar). Marinate the steak for at least 1 hour or up to 24. After that, remove the steak from the marinade.
Heat a grill/grill pan/saute pan to high heat. Cook the steak to your desired degree of doneness. Allow the meat to cool down at least 10 minutes before slicing it up. Make sure you cut against the grain.
Prepare the taco sauce by combining the mayonnaise, salt, chipotle peppers, garlic and salt. Stir the mixture until everything is well combined.
Place a corn tortilla in a pan over medium heat, then sprinkle with 1/4 cup cheddar cheese on top. Cover the cheese-sprinkled tortilla with a second tortilla. Cook the tortillas until the cheese melts, then flip it once. Make sure the tortillas are soft and not crispy.
Assemble a vampire taco in this sequence: top the tortillas with a spoonful of guacamole, a few slices of steak, then top with pico de gallo, cotija cheese, and some of the sauce. You may garnish with cilantro if you like.
Serve the taco and enjoy.
